The operational system delivers 27,000 BTU/hour per section, using Dual Flow Gas heat. It features SSI-M solid state manual controls with optional SSD digital controls and SimpleTouch touchscreen capability for recipe storage and grouping. Additional operational functions include rack timing, Cook & Hold, Fan Delay, Fan Pulse, and HAACP storage.
