HV-100G Single Gas Hydrovection Oven – Liquid Propane, 60000 Total BTU. This oven includes the same welded frame construction, Low E glass door with expanded viewing area and cool-touch surface, triple mounted door with turnbuckle assembly, stainless steel liner, hand shower, and halogen lighting. It features standard programmable controls for hot air, humidity, and cool down, with 100-recipe storage, and the optional SmartTouch2 touchscreen expands this to 500 recipes with enhanced control functions. Incremental humidity, Hydroburst steam injection, core probe cooking, USB connectivity, four-speed auto-reversing fan motor, and cavity vent control are all included. Factory-paid startup is provided. Capacity is (5) full-size sheet pans or (10) 12" x 20" x 2-1/2" steam table pans.
